Uncle’s Smallgoods Gluten-Free Ham Glaze Recipes

All of these glazes are gluten-free, making them perfect for those with gluten sensitivities or anyone preferring a gluten-free diet.
Gluten-Free Orange Juice and Brown Sugar Glaze
Ingredients:
- 1 Uncle’s Smallgoods Leg Ham (6-7 kg), skin removed
- 750ml fresh orange juice
- 525g unrefined brown sugar (ensure it’s gluten-free)
- 250ml red wine vinegar (check label to ensure gluten-free)
- 1 stick cinnamon
- 8 whole cloves
- 16 sprigs fresh thyme
- 750ml port (optional, ensure it’s gluten-free)
Instructions:
- Preheat the oven to 220°C.
- In a medium saucepan, combine orange juice, brown sugar, red wine vinegar, cinnamon, cloves, and thyme over high heat. Stir until the sugar dissolves.
- Bring to a boil and cook for about 30 minutes until reduced.
- If using, remove from heat and stir in port. Strain the glaze into a jug.
- Place the Uncle’s Smallgoods ham in a deep baking dish, pour the glaze over it, and roast for 10 minutes.
- Turn the ham over, baste with the glaze, and roast for an additional 10–15 minutes until golden.
Gluten-Free Honey Mustard Glaze
Ingredients:
- 1 Uncle’s Smallgoods Whole Ham (about 5-6 kg)
- Whole cloves for garnishing (optional)
- 250ml Australian honey
- 220g unrefined brown sugar or coconut sugar (ensure it’s gluten-free)
- 60ml gluten-free Dijon mustard
- 2 tablespoons grass-fed butter
- 1 tablespoon apple cider vinegar (ensure it’s gluten-free)
Instructions:
- Preheat oven to 175°C and line a roasting pan with foil.
- Score the Uncle’s Smallgoods ham in a criss-cross pattern and insert cloves into each diamond if desired.
- Bake the ham for 30 minutes.
- In a saucepan, combine honey, brown sugar, mustard, butter, and vinegar over medium heat until melted and combined.
- Baste the ham with the glaze every 15 minutes for a total cooking time of about 90 minutes.
Gluten-Free Orange Honey Glaze
Ingredients:
- 1 Uncle’s Smallgoods Bone-In Ham (3 to 4 kg)
- 250ml water or gluten-free broth
- 220g packed brown sugar (ensure it’s gluten-free)
- 250ml Australian honey
- 125ml gluten-free sweet orange marmalade
Instructions:
- Preheat oven to 175°C.
- Place the Uncle’s Smallgoods ham in a shallow roasting pan and add water or broth to the bottom.
- In a saucepan, combine brown sugar, honey, and orange marmalade over medium heat until boiling; simmer for about 2–3 minutes.
- Spoon half of the glaze over the ham and bake uncovered for 30 minutes.
- Apply the remaining glaze and bake for another 15 minutes before serving.
Gluten-Free Sugar-Free Maple Glaze
Ingredients:
- 1 Uncle’s Smallgoods Ham (size of your choice)
- 125ml sugar-free maple syrup or substitute
- 60g golden monk fruit sweetener
- 60g brown monk fruit sweetener
- Juice and zest of 1 orange
- 2 tablespoons gluten-free Dijon mustard
- 2 tablespoons grass-fed butter (optional)
- 1/2 teaspoon each of ground cinnamon, allspice, and cloves
Instructions:
- In a small saucepan, whisk together all ingredients except butter.
- Heat over medium-high until boiling; reduce heat to low and add butter if using.
- Simmer for about 10 minutes until slightly thickened.
- Brush over the Uncle’s Smallgoods ham during the last few minutes of cooking to allow it to caramelize.
